My suggestion is the Curt Adjustable Hitch # 13703 along with a trailer/RV approved bike rack. The Curt hitch will mount to any box frame, C-channel frame, or I-beam frame that is between 22 inches and 72 inches wide. The included hardware can be used to bolt the hitch to the trailer or it can be welded on for a no-drill application. I have attached an installation video that you can use for reference.

Since Atwood is no longer around and we can't get their replacement lead and follow jacks your best option will be to replace the entire landing gear set like with the similar # LG-1 for a powered set or part # LG-183708 for a manual set. There normally is a Sidewinder that fits in place of the MORryde pin box you have now that is designed for a 1621 style pin box but at this time they are out of stock as odd as that sounds. If you can find one this would be the best option for turning clearance on the trailer side but since you have a gooseneck hitch type of attachment for your hitch you actually can't use one since that's not secure enough for the Sidewinder that puts more stress on the hitch.

I have a couple solutions for you.
You can use the A-iPower 3,800-Watt Portable Inverter Generators - 3,000 Running Watts - Gas - Manual Start # 289-SUA2000i-2. It can power one 15,000 BTU AC unit and run one or two other appliances at the same time. It has a built in inverter and is more quiet than your standard portable generator unit.
I prefer the AI set up. The units are small and easy to handle and stow away.

For your 2018 Jayco Eagle 336FBOK the brake assemblies you'd want is the part number # 23-458-459 which is the correct 12 inch brake assembly size for a 6k axle and are self adjusting. That means you would never have to worry about adjusting them as they would always keep themselves at the correct tightness.
